Glycemic Index and Carbohydrates

It is important to understand the relationship between carbohydrates and your health. We all know we should eat our vegetables which are carbohydrates low on the glycemic index. On the other hand, ice cream, donuts and cake are also carbohydrates, but they are high on the glycemic index.

 

We all know that we should eat 5 to 10 servings of fruit and vegetables each day. It sounds like a lot but is actually not. A serving of most vegetables is one cup uncooked and half of a cup cooked. A serving of fruit is half a cup. Half a cup is equal to four ounces, not very much at all. The reason that fruit and vegetables are so good for you is that in addition to mostly being low glycemic and thus not disturbing your blood sugar, they contain fibre and phytonutrients.

Phytonutrients are the vitamins, minerals, antixidants and glyconutrients found in vegetables, fruit and nuts.

Additionally eating fruit and vegetables increases the fiber in your diet and the good news is, that fiber also reduces the glycemic footprint of any meal.
